In the last 12 months since our 30th an­niver­sary edi­tion of Hong Kong Tatler Best Restau­rants, the city has be­come an even bet­ter place to dine. We’ve wit­nessed it in the spate of restau­rant open­ings, a trend that shows no sign of slow­ing down, and in the qual­ity of the food and drink that we have been priv­i­leged to ex­pe­ri­ence. We’ve wel­comed new chefs to our shores – in­di­vid­u­als who have brought with them thrilling new points of view – and dined in spa­ces that, by virtue of their de­sign alone, trans­ported us to another era.

Each week, it seemed, brought with it a fris­son of ex­cite­ment as the next newew thing threw open its doors. Not all were suc­cesses – we’ve had our share of ques­tion­able din­ners, wasted bills and stom­ach space – but among the hits, there have been many that have made a con­sid­er­able im­pres­sion.

This fact couldn’t have been bet­ter re­flected than in our an­nual read­ers’ choice poll, which can­vasses the opin­ions of the peo­ple to crown the re­gion’s best new restau­rant. This year, com­pil­ing the six-strong short­list has been es­pe­cially dif­fi­cult, owing to the num­ber of out­stand­ing restau­rants that have opened in the qual­i­fy­ing pe­riod. There were plenty more that have im­pressed, chal­lenged and, above all, de­lighted us, but only one could take home the cov­eted prize: turn to page 86 to see how the pub­lic voted.

As well as dis­cov­er­ing new favourites, we’ve also reaf­firmed our love for the old faith­fuls. Ev­ery year, we go through the painstak­ing process of re­view­ing more than 200 restau­rants to de­ter­mine the cream of the crop, based on the re­cent ex­pe­ri­ences of our pan­el­lists, to cher­ryp­ick the 20 restau­rants that have im­pressed us the most. We’ve also been hard at work on the dig­i­tal equiv­a­lent of the guide, HongKongTatlerDin­, where you’ll find even more de­tail on the restau­rants you see in this book, plus the lat­est din­ing news, videos and reviews. The site, which is pub­lished in both English and Chi­nese, is the prod­uct of a team of pas­sion­ate, food-loving writ­ers who are ded­i­cated to show­cas­ing the most ex­cit­ing facets of our culi­nary land­scape.

This year, we’ve in­tro­duced the first fea­ture of its kind in Hong Kong – a list of the lat­est restau­rant launches and open­ing ru­mours, up­dated in real time. You won’t find a bet­ter re­source out there with its fin­ger firmly on the din­ing pulse.

And what a heart-rac­ing year it has been for lovers of fine din­ing and those who love to eat, drink, and make merry. As Hong Kong Tatler Best Restau­rants en­ters its 31st year in the city, we hope you en­joy read­ing the guide as much as we en­joyed com­pil­ing it.
