hen we last met Umberto Bombana at his Hong Kong r estaurant in late 2014, t he j ovial chef was looking over t he final blueprints for his Galaxy Macau opening and deciding on the Italian artworks that would hang on t he walls t here. Bombana has always been heavily involved in his projects—and his latest offering i n our sister SAR is no exception. Knighting chef Antimo Maria Merone, most recently at L’Altro in Central, was another one of Bombana’s cunningg decisions to create a superlative armm of his lauded Italian fine-dining restaurant.
Much like t he r estaurant i n Hong Kong,g, you must first find it by navigating past a series of l uxury boutiques before you arrive. But unlike Hong Kong, this restaurant has t he benefit of a far larger space—the entrance is dramatic, as tall doors open out to a beautiful, circular bar stocked with a connoisseur’s selection of fine li quors
