hen we last met Um­berto Bom­bana at his Hong Kong r es­tau­rant in late 2014, t he j ovial chef was look­ing over t he fi­nal blueprints for his Galaxy Ma­cau open­ing and de­cid­ing on the Ital­ian art­works that would hang on t he walls t here. Bom­bana has al­ways been heav­ily in­volved in his projects—and his lat­est offering i n our sis­ter SAR is no ex­cep­tion. Knight­ing chef Antimo Maria Merone, most re­cently at L’Altro in Cen­tral, was an­other one of Bom­bana’s cun­ningg de­ci­sions to cre­ate a su­perla­tive armm of his lauded Ital­ian fine-din­ing restau­rant.

Much like t he r es­tau­rant i n Hong Kong,g, you must first find it by nav­i­gat­ing past a se­ries of l ux­ury bou­tiques be­fore you ar­rive. But un­like Hong Kong, this restau­rant has t he ben­e­fit of a far larger space—the en­trance is dra­matic, as tall doors open out to a beau­ti­ful, cir­cu­lar bar stocked with a con­nois­seur’s se­lec­tion of fine li quors
