The brand-new Ritz-Carl­ton ho­tel in Ma­cau is beau­ti­fully de­signed, with op­u­lence in ev­ery cor­ner. Even its ca­sual all-day cafe is noth­ing short of stun­ning. De­signed to re­sem­ble a high-end Parisian bistro, the venue makes great use of mar­ble, brass and mir­rors for a con­ti­nen­tal look; we’re not quite as con­vinced by the use of ac­tors pos­ing as mimes, how­ever. Still, the food is fan­tas­ti­cally French, with clas­sics such as lob­ster bisque and steak tartare done to a very high level; oys­ters are per­fectly shucked and served at the ideal tem­per­a­ture. The wine list is well cu­rated, with spe­cials high­lighted in a by-the-glass pro­mo­tion, and cock­tails are fun and fresh. Ser­vice is friendly and pol­ished, as would be ex­pected of The Ritz-Carl­ton brand.
