Since open­ing, The Ritz-Carl­ton in Ma­cau has man­aged to im­press with its culi­nary of­fer­ings—and the sig­na­ture bar is equally thrilling. Po­si­tioned on the 51st floor of the all-suite ho­tel, the airy lounge al­lows a view over the ex­pan­sive Galaxy Ma­cau com­plex, while the sul­try main bar is ideal for a ren­dezvous over fine li­ba­tions—the gin trol­ley is par­tic­u­larly wor­thy of spe­cial at­ten­tion with its high­brow selections and var­i­ous botan­i­cals to pair, from rose pe­tals to star anise. Cock­tails are cre­atively pre­sented, such as the Oishii, a Ja­panese-in­spired drink that comes with slices of pink grape­fruit mas­querad­ing as slabs of tuna sashimi, rest­ing atop a fra­grant shiso leaf. The bar snacks are no or­di­nary of­fer­ings, ei­ther, with items such as pan-seared Hokkaido scal­lops with mango chut­ney, co­conut es­puma and macadamia nuts.
