Friends of Michelle Ma and Christopher Chan gathered for a private dinner to preview their new restaurant, Arbor
Hong Kong Tatler’s T.dining partnered with Michelle Ma and Christopher Chan to host a private dinner at Arbor, the couple’s new restaurant at H Queen’s in Central and the sister of Épure, the contemporary French restaurant in TST helmed by chef Nicolas Boutin. The menu at Arbor, the brainchild of chef de cuisine Eric Räty, is inspired by the forest and nature’s seasons. The fine cuisine is supported by an extensive selection of wines—a 1,700-bottle collection on display in a customdesigned facility. Guests enjoyed a 10-course meal that incorporated foie gras, wild seabass and wagyu beef. The wines served included Krug Grande Cuvée, Louis Jadot Montrachet 2012 and Château Mouton Rothschild 1996. Following dessert and freshly baked madeleines, some of the guests rounded off the evening with 30-year-old Hibiki whisky.
