750ml bottle of VSOP Cognac (or equivalent) 100ml dark rum 1 cup brown or demerara sugar 6 cinnamon sticks 3 tablespoon­s cloves 3 slices ginger gratings of nutmeg peel from 3 oranges (do not include pith) peel from 1 lemon (do not include pith)

2 tablespoon­s dried cherry 5 pieces dried apricot 3 tablespoon­s golden raisins 3 tablespoon­s regular raisins 3 tablespoon­s dried cranberrie­s 2 dried prunes 1 vanilla bean Pinch of salt 1 vanilla bean Pinch of salt

Put all the ingredient­s into an airtight glass jar. Store in a cool place for a minimum of two weeks (if storing for longer than a few weeks, keep it away from light and heat). Serve on the rocks with a splash of soda water to dilute to your liking.
