First grab a junk and sort catering (see V. Useful for all), then decide where to go. Tai Long Wan is stunning; Tai Tam is quick to get to + has water sports; Po Toi is south with scenic trails; the Soko Islands have a great empty beach; Cheung Sha Wan on Lantau has a decent beach, but no jetty–you’ll need a tender; Sai Kung is pretty + pristine.
