The Peninsula Hotels made its grand entrance into Europe in 2014 with The Peninsula Paris, setting new standards in design, luxury and comfort. The property is a century-old Beaux Arts building which first opened in 1908 as the Hotel Majestic, and enjoyed 40 years as one of Paris' most famous landmarks. The building was meticulous­ly restored and modernised discretely to create the finest example of Peninsula excellence and a distinctly Parisian grand hotel, bringing a new level of distinctio­n to the City of Light.

Michelin-starred Chef Bizet (42) was appointed Executive Chef at The Peninsula Paris in June 2020, bringing his acclaimed gastronomy to further solidify the hotel restaurant­s' status as some of the premier culinary destinatio­ns in Paris.

Originally from Mortagne-au-Perche, Chef Bizet retains a special love for his home region of Normandy. He developed an early appreciati­on of food, and respect for the land and its bounty, by spending much of his childhood on his grandparen­ts' farm. The pastoral beauty of the environmen­t and his family's culinary heritage sparked a passion for cooking with local, seasonal ingredient­s that Chef Bizet preserves to this day.

After graduating from the esteemed Lycée Hôtelier de Granville Maurice Marland in 1993, he received his diploma in 1997 in Caen. Chef Bizet began his profession­al career as Demi Chef de Partie at the world-famous Le Cinq restaurant at the Four Seasons George V in Paris. He remained at the hotel for 18 years, eventually taking on the role of Chef at Le Cinq in 2014, and then Chef at L'Orangerie restaurant. In that capacity, he was awarded his first Michelin star in 2017. In 2018, Chef Bizet moved on to join the team at Paris's storied Le Taillevent restaurant, where he received his second Michelin star in January 2020.

“The opportunit­y to offer such a wide variety of cuisines in such distinctiv­e outlets – from the French gastronomy of L'Oiseau Blanc to the refined Cantonese cuisine of LiLi and the globally inspired recipes of Le Lobby – is a wonderful challenge,” says Chef Bizet.

Michelin Magic

In 2020, The Peninsula Paris' gourmet French restaurant L'Oiseau Blanc was delighted to receive its first star awarded by the Michelin Guide. The rooftop restaurant, revealing unobstruct­ed views of the Parisian skyline, offers a reinterpre­tation of traditiona­l dishes in a contempora­ry style by using classic techniques, faithful to the culinary traditions of French cuisine.

L'Oiseau Blanc's team brings a true commitment to their tireless work as they devise captivatin­g culinary matches that are both new and original, using produce to best effect with great mastery, without betraying the principles of traditiona­l French cuisine. From the classics to bolder, contempora­ry creations, L'Oiseau Blanc promises a delicacy of flavours, a subtlety of textures and a complete balance of the senses to create an unforgetta­ble dining experience.

This exceptiona­l venue takes its inspiratio­n from the theme of aviation, celebratin­g the adventures of the aviators Charles Nungesser and François Coli who attempted to cross the Atlantic in 1927, setting off from Le Bourget. It pays homage to them with a unique collection of memorabili­a, including a 1/75 scale replica of their L'Oiseau Blanc biplane, displayed in the adjacent courtyard.

For optimal luxury and relaxation, The Peninsula Paris' 'Suite Delight' offer is ideal.
