Through­out Mexico, the Paloma, rather than the mar­garita, is the te­quila cock­tail of choice. Of­ten made with sil­ver te­quila and Squirt (a grape­fruit soda) or fresh grape­fruit juice and club soda, it’s easy, de­li­cious, and re­fresh­ing on a sunny day. Wynn master mixol­o­gist Pa­tri­cia Richards has upped the ante with this sweet and cit­rus in­ter­pre­ta­tion, ideal for pool­side loung­ing. Olé! Rim half a large tum­bler glass with a half-inch swath of sa­vory lime dust. Set aside. Place the first four in­gre­di­ents in a cock­tail shaker with ice. Shake and strain over fresh ice into the rimmed glass. Top with Pom­pelmo. Gar­nish with a quar­ter grape­fruit slice.
