Throughout Mexico, the Paloma, rather than the margarita, is the tequila cocktail of choice. Often made with silver tequila and Squirt (a grapefruit soda) or fresh grapefruit juice and club soda, it’s easy, delicious, and refreshing on a sunny day. Wynn master mixologist Patricia Richards has upped the ante with this sweet and citrus interpretation, ideal for poolside lounging. Olé! Rim half a large tumbler glass with a half-inch swath of savory lime dust. Set aside. Place the first four ingredients in a cocktail shaker with ice. Shake and strain over fresh ice into the rimmed glass. Top with Pompelmo. Garnish with a quarter grapefruit slice.
