The plant-based “meat,” from the California-based company Impossible Foods, is featured in three dishes at Andrea’s—thai Crispy Rice Cups, sliders, and Ma Po Tofu, a unique take on traditiona­l meatballs—all of which, Executive Chef Joseph Elevado says, “showcase both the product and the restaurant’s elevated approach toward innovation.” At Andrea’s in Wynn Palace in Cotai, meanwhile, guests can feel like they’re eating straight from the garden with this tofu chrysanthe­mum soup. Representa­tive of Huaiyang-style cooking, the soup is prepared with fresh Australian abalone and 400–500 delicate hand-cut slices of tofu.
