Mizumi Kaiseki
New seasonal kaiseki menus were launched at Mizumi at Wynn Palace to rave reviews this summer. Explains Mizumi’s chef Min Kim, “The kaiseki menu is a highly respected style of cooking in Japan, which has been evolving over the years. Kaiseki emphasizes the seasonality and freshness as well as preserving the original taste of the ingredients.” Continuing into fall, Kim is using autumnal ingredients like matsutake mushrooms and sweet potatoes. “Kaiseki reflects the most traditional and elegant Japanese cuisine that balances the taste, texture and presentation and color of each dish,” says the chef. “Well-balanced dishes complement each other to create a sense of harmony and please the palate.”
