New seasonal kaiseki menus were launched at Mizumi at Wynn Palace to rave reviews this summer. Explains Mizumi’s chef Min Kim, “The kaiseki menu is a highly respected style of cooking in Japan, which has been evolving over the years. Kaiseki emphasizes the seasonalit­y and freshness as well as preserving the original taste of the ingredient­s.” Continuing into fall, Kim is using autumnal ingredient­s like matsutake mushrooms and sweet potatoes. “Kaiseki reflects the most traditiona­l and elegant Japanese cuisine that balances the taste, texture and presentati­on and color of each dish,” says the chef. “Well-balanced dishes complement each other to create a sense of harmony and please the palate.”
