Dill sauce with egg and new potatoes

Koprová omáčka s vejcem a novými bramborami Ingredient­s

2 dl milk • 2 dl double cream • 30 g butter • 60 g plain flour • 1 bundle dill • 500 ml beef broth or stock • vinegar • sugar • salt • 4 eggs, hard-boiled • new potatoes, boiled chives • yolk side up. Sprinkle the potatoes with the chives. You can serve it with cooked beef instead of an egg, or with both to big eaters. Also, potatoes can be replaced with bread dumplings, especially in the winter.

This sweet-and-sour creamy sauce is one of those dishes either loved or hated. The balance of the two flavours is extremely important. Don’t underestim­ate this point and keep tasting the sauce while it cooks. This unique sauce definitely deserves its place on the list of the top Czech classics.
