Refreshing Cucumber Sandwiches

Ingredient­s: 1 cucumber, peeled * white bread, thinly sliced * butter, at room temperatur­e * cream cheese * fresh chives, chopped * fresh dill, chopped * sea salt, fine * finely ground black pepper * garlic powder (optional) * mayonnaise or sour cream (optional) * 1 dash Worcesters­hire sauce (optional)

My children need to refuel ring the day at school to energy and This snack definitely helps. It is healthy, light, refreshing and, as my children say, yummy. And for me, these sandwiches are so easy to make with the cheese spread ready in the fridge for several days.

Spread one side of each slice of bread with a thin layer of the butter. Mash the cream cheese, mayonnaise, chives, garlic powder, salt and pepper together with a fork until smooth. Spread the cream cheese mixture evenly on the buttered bread. Divide cucumber slices over half of the bread sli- ces and arrange a single layer on each of them. Sprinkle with the dill. Stack the other half of the bread slices over the cucumber to make sandwiches.

If serving the sandwiches as one of the appetisers at a party, remove the crusts, cut into fingers, triangles or squares and spread a thin layer of butter onto one of the cut sides, then dip into the chopped chives. Serve immediatel­y.

You can keep the cream cheese spread in the refrigerat­or for about a week, so you can make the sandwiches over and over again.
