The chef is Abhinesh Sharma, whose cooking masters the art of magnifying the flavours of high quality, fresh ingredient­s such as the Yasawa Rock Lobster Thermidor style, cooked in a rich sauce made of lobster shells, brandy, Dijon mustard and stuffed back into the shell to be baked. Or try the pan-seared Walu served with prawns, braised octopus with sweet potato mousseline and a baby caper sauce vierge. The restaurant is also known for its superb attentive service, impressive wine list and stylish, comfortabl­e décor.

Radisson Blu Resort Fiji brings Byblos to Fiji with a dining experience that embraces the authentic Lebanese & Mediterran­ean cuisine. What started off as a trial inclusion to the resort’s menu turned so popular that a full restaurant with a full genuine Lebanese menu was inevitable. Visiting the restaurant for the first time, you will immediatel­y be captivated by its set up and ambience; a blend of locally hand painted nostalgic art on the restaurant walls combined with a retro feel of the dining set up and a soothing view of the Mamanuca Islands in the background.

If that’s not enough to set the mood, the restaurant offers Lebanese beverages with wines straight from the source of Bekaa Valley in Lebanon, home to one of the oldest winemaking regions in the world. Also on the beverage menu are Lebanese non-alcoholic specialiti­es such as the Jallab, a refreshing drink made from grape molasses, dates and rose water served with raisins and pine nuts; and the famous Batrouni Lemonade, a traditiona­l welcome drink in Lebanon’s Batroun City.

Infused with locally procured fresh seafood, grilled meats and fresh greens, the restaurant’s aromatic spices are also acquired from Lebanon.

Perfect for any occasion, the restaurant’s menu offers a Chef’s set menu with options from vegetarian platter to fresh seafood grill and meat combinatio­n. Each set menu has a unique name symbolic to its offering. From Eshmun (Phoenician God of healing) featuring a vegetarian platter for one person or more; to Beirut menu, named after the capital City of Lebanon. Just like the size of the City, the Beirut menu is also the largest spread in the Chef’s set menu.

Other options from Byblos menu entails an entrée variety of cold and hot mezza including salad, with mains from the charcoal grill and a vegetarian corner. No meal is complete without dessert and on the sweet menu are options from Baklawa to Mhalabieh, Riz bi Haleeb and more. Executive Sous Chef George (also Lebanese), recommends a mouth-watering traditiona­l Lebanese Tabbouleh, hummus, fresh saj bread, Mashawi (charcoal grill) and the famous baklawa dessert made of layered filo pastry filled with nuts and steeped in sugar syrup.
