Watercress slushy
Serves: 01 Cooking time: 10 minutes
Watercress
1 Mango (Chopped) ¼ Pineapple (Chopped) 1 Cup Coconut Water 6 Ice Cubes (Blend Mix)
1. Clean and wash all ingredients.
2. Roughly chop watercress, pineapple, mango and place in the blender.
3. Pour coconut water and top it up with ice*.
4. Blend till smooth.
5. Serve fresh.
Watercress egg foo young
Serves: 02 Cooking time: 30 minutes
6 free range eggs
1 Tbsp. Sesame Oil
¼ Cup Light Soy Sauce Watercress (Chopped)
Salt & Pepper to taste
1½ Tsp. Butter
1 Cup Oil
Gravy:
1½ Cup Chicken Stock 3 Tbsp. Light Soy Sauce
2 Tsp. Sugar
3 Tsp. Corn Flour 2 Tsp. Sesame Oil
1. In a large bowl, crack 6 eggs. Add in light soy sauce, and sesame oil.
2. Whisk till well combined.
3. Season with salt & pepper and add butter.
4. Wash and chop watercress into small pieces.
5. Add to the egg mixture and mix well. Set aside.
6. In another small bowl, mix chicken stock with light soy sauce, sesame oil, sugar, and corn flour. Mix till well combined.
7. Heat a small sized fry pan, pour the chicken stock mix to the pan and cook till thick. Keep stirring while it cooks to avoid lumps.
8. Heat a large fry pan and add oil to the pan.
9. Once heated, pour the egg mixture and fry till egg is cooked through.
10. Serve hot with rice and gravy.
Watercress power ball snack
Serves: 05 Cooking time: 35 minutes
½ Cup pumpkin seeds (add to blender) Watercress (Chopped)
3 Tbsp. Chia Seeds 2 Tsp. Cocoa Powder ¼ Cup Peanuts 4 Tbsp. Muesli
¼ Cup Dates
1 Tsp. Vanilla Extract ½ Tsp. Turmeric ½ Cup Orange Juice ¾ Tsp. Cinnamon 2 Tbsp. Honey
½ Tsp. Salt
1. Add pumpkin seeds to a dry blender and blend to a fine powder.
2. Place half of the powder in a dish and the remaining in a wet blender.
3. To the wet blender, add chopped watercress, chia seeds, cocoa powder, peanuts, muesli, dates, vanilla extract, turmeric, orange juice, cinnamon powder, honey and salt*.
4. Blend till well combined. The paste doesn't have to be smooth.
5. Remove the contents of the blender to a plate.
6. Using your hands, make small balls of the paste and roll it on the pumpkin seeds powder.
7. Place the balls on a plate and leave it in the refrigerator for about 20 minutes or until firm.
8. Serve as a snack.
* You can use any available nuts or granola.
