Avocado wraps
Serves: 02 Cooking Time: 20 minutes
Guacamole:
1 Avocado
¼ Onion (chopped) 3 Cloves garlic (minced) 1 Kumquat juice
1 Tsp. Ground cumin 1 Tsp. Sweet paprika 1 Ripe tomato (chopped) Salt & pepper to taste
For the wrap: 1 Tbsp. Butter 2-3 Tortilla wraps ½ Cup fresh moca
¼ Cup cooked lentils ¼ Cup canned chickpeas
1. Prepare guacamole: add avocado, onion, garlic, kumquat juice, cumin, paprika, tomato. Salt and pepper. Squash and mix using a potato masher. Set aside.
2. Heat a girdle or fry pan. Add butter to the pan and heat the tortilla wraps till they become soft.
3. Place the tortilla on a board and add all the fillings (guacamole, moca, lentils and chickpeas), wrap tightly.
4. Cut in half and serve as a side dish or snack.
