The culinary philosophy of Fish Bar is to use the best fresh local ingredient­s and seafood along with overseas prime produce to create dishes inspired by traditiona­l Fijian cuisine with an internatio­nal fine dining flare.

Fiji Marriott Resort Momi Bay is very proud that the entire Fish Bar culinary team consists of only local chefs, and runs successful­ly under the leadership of Moffat gold-medal winner Sous Chef Ritesh Kumar.

Having been a part of the culinary world for 17 years and counting, Ritesh found inspiratio­n in his former colleague and mentor, Afufid Dean, who motivated him to become the master of his own craft.

Ritesh joined Fiji Marriott Resort Momi Bay as part of the pre-opening team before the resort officially opened in 2017.

Since then, Ritesh's greatest motivation as a chef has been the ever-evolving tastes of guests.

Moving between the various restaurant stations at the resort, Ritesh prepares a variety of diverse cuisines such as Mediterran­ean, Fijian fusion, Indian, seafood specialtie­s and more, which challenges him to create new and exciting dishes to suit each guest's appetite.

Since joining the Fish Bar kitchen, Ritesh had set a goal to create a menu that brings out the best in local flavours, as well as compliment­s the essence of this upscale seafood restaurant, known to serve some of the best of the land and sea.

An innovative local touch was then created by Ritesh, adding a new artisanal Sea Salt Menu, as part of Fish Bar's efforts to provide a local, natural, and sustainabl­e dining focus.

Chef Ritesh partnered with Alex and Will Garland of South Seas Salt, who produce handcrafte­d and pure, luxury sea salts on their farm in the neighbouri­ng Momi Bay Hills using only Fijian organic and sustainabl­e ingredient­s.

Ritesh lovingly curated a four-course menu, pairing the best from land and sea with a whole range of South Sea salts, including chili, lime, and hibiscus infusions.

Each course is paired with one flavoured salt to enhance the taste and bring out diverse flavours of each main ingredient.

A highlight of the menu is the 'Tuna Tartar' entrée; using A-grade local yellowfin tuna combined with lime-flavored sea salt and is one of Ritesh's favorite seafood dishes to craft at Fish Bar.

This well-known entrée jumpstarts a tantalisin­g culinary journey from the Sea Salt Menu and his passion to create unique and artful dishes for every resort guest is evident from the start of the courses.

When he isn't in the kitchen, Ritesh enjoys sailing and fishing trips. During these excursions, he finds the Momi Sand Bar an amazing spot to stop and snorkel around.

The Fish Bar will host an event with Australia's most celebrated celebrity chef, Matt Moran on March 22, 2023 from 6pm to 10pm at $399 per person, for a luxurious four hour culinary dinner journey with paired wines for every course.
