A stone’s throw from the cel­e­brated Ca­pucins Mar­ket, Le Taquin is a card-car­ry­ing ‘lo­ca­vore’ es­tab­lish­ment. The paired-down menu of­fers 2 starters, mains and desserts each day, which sounds sim­ple enough. But ‘taquiner’ means to tease and chef Hadrian Lavaud does just that. Us­ing south-west French cui­sine as a base, he plays with Ital­ian, Span­ish and even Bri­tish in­gre­di­ents and flavours. Beef Welling­ton comes with sauce Perigueux, a rich, pun­gent re­duc­tion of white wine and black truf­fles, and con­fit of ap­ples is part­nered with an orange-flower panna cotta.
