It is a brand new con­cept and one I have al­ways wanted to open. We wanted to of­fer healthy, tasty and ef­fi­cient food – mix­ing snack­ing and gas­tron­omy on a bento plat­ter. It has been full since we opened.

What is the se­cret to great ‘ fast food’?

Sea­sonal, fresh, tasty food, that is served quickly enough for the clients to be able to en­joy the mo­ment in 45 min­utes.

What do you love about the Grand Prix? Do you have a favourite For­mula One team?

It is the most ex­cit­ing time of the year in Monaco. Ev­ery­one is al­ways happy. My favourite For­mula One team is Mclaren.

Which For­mula One driver would you like to drive you around?

See­ing Monaco from a For­mula One car with Nico Ros­berg would be some­thing unique!

Could you rec­om­mend a de­li­cious dish for your favourite For­mula One driver?

Our cas­sava, truf­fle, pas­sion fruit and organic chicken egg is some­thing very spe­cial at the Blue Bay.
