Re­cently awarded his third Miche­lin star for his Menton restau­rant Mirazur, Ital­ian-ar­gen­tine chef Mauro Co­la­greco is the name to know in French cui­sine. On the bor­der of the French and Ital­ian Rivieras just 20 min­utes from Monte Carlo and nes­tled be­tween the sea and moun­tains, Mirazur uses pro­duce from its gar­dens. Co­la­greco has sourced meat and fish from tra­di­tional lo­cal farm­ers and fish­er­man and, so he says, tries to ‘cre­ate un­ex­pected taste ex­plo­sions’. Since open­ing in 2009 it has won nu­mer­ous awards, in­clud­ing third place in the pres­ti­gious The World’s 50 Best Restau­rants for 2018.
