Wine, to me, is the opportunity to manipulate the gifts of mother nature in order to create a truly exceptional product. If you were to fill a bucket with grapes and leave it alone for a week you will have in the bottom of the bucket what is essentially wine. It’s up to us, the winemakers, to guide this process in order to end up with a beautiful product which expresses the beauty of the grapes.I agree with the winemakers who say wine is made in the vineyard. You need to have a well balanced grape in regards to the sugar, the acid etc, a ripe grape with a deep color.With this grape, if the winemaker takes very good care of it in the chai, he/she can guide the fermentation and the rest of the process, to have, as a final product, the purest, best wine that nature can provide. I feel lucky to have the opportunity to work hand in hand with nature.
