Romain Guyot is a young and talented chef who has made his home in the terroir of Aquitaine, his adopted region. Currently chef of the restaurant Le Gabriel (Gastronomic Restaurant and Bistrot Gourmand) he made his debut among the famous names of French gastronomy. ”I’ve been passionate about cuisine since I was a kid. Certainly because many members of my family worked in this sector. The idea of becoming a chef came insidiously, naturally with time. I’m born in Paris but I grew up in Entre-deux-mers (Bordeaux region). Thereafter I returned to Paris to work at Le Bristol Restaurant and L’Agapé Restaurant. Thereafter I returned to Bordeaux to work with Nicolas Frion at Le Gabriel.
What is important for me is to give a spotlight to a product and its producer. I do not want a dish mixing 15 different flavors. That’s not what interests me. What I want for each of my dishes is to simply cook local product. For example in the Pigeon dish we highlight the name of the producet and then the pigeon simply accompanied by onions and a delicious juice. I am a Terroir product lover !
My leitmotiv is also to give pleasure and a smile to people. It is also what I like in this job, it’s the contact with the customer !” Le Gabriel is two restaurants in one building. On the one hand, the Gastronomic restaurant for which the Chef imagined an upscale kitchen, produced refined and delicious meals made from seasonal ingredients. Everything is carefully selected and made to give you a wonderful culinary journey. On the other side, the Bistrot Gourmand has a delicate and authentic menu waiting for you to include you in the discovery of the Aquitaine terroir. His goal : Obtaining a Michelin star and brings a smile to customers ?!
