Ro­main Guyot is a young and tal­ented chef who has made his home in the ter­roir of Aquitaine, his adopted re­gion. Cur­rently chef of the restau­rant Le Gabriel (Gas­tro­nomic Restau­rant and Bistrot Gour­mand) he made his de­but among the fa­mous names of French gas­tron­omy.

«I’ve been pas­sion­ate about cui­sine since I was a kid. Cer­tainly be­cause many mem­bers of my fam­ily worked in this sec­tor.The idea of be­com­ing a chef came in­sid­i­ously, nat­u­rally with time. I’m born in Paris but I grew up in En­tre-deux-mers (Bordeaux re­gion).There­after I re­turned to Paris to work at Le Bris­tol Restau­rant and L’Apagé Restau­rant.There­after I re­turned to Bordeaux to work with Ni­co­las Frion at Le Gabriel.

What is im­por­tant for me is to give a spot­light to a prod­uct and its pro­ducer. I do not want a dish mix­ing 15 dif­fer­ent fla­vors.That’s not what in­ter­ests me.What I want for each of my dishes is to sim­ply cook lo­cal prod­uct. For ex­am­ple in the Pi­geon dish we high­light the name of the pro­ducet and then the pi­geon sim­ply ac­com­pa­nied by onions and a de­li­cious juice. I am a Ter­roir prod­uct lover !

My leit­mo­tiv is also to give plea­sure and a smile to peo­ple. It is also what I like in this job, it’s the con­tact with the cus­tomer!»

Le Gabriel is two restau­rants in one build­ing. On the one hand, the Gas­tro­nomic restau­rant for which the Chef imag­ined an up­scale kitchen, pro­duced re­fined and de­li­cious meals made from sea­sonal in­gre­di­ents. Ev­ery­thing is care­fully se­lected and made to give you a won­der­ful culi­nary jour­ney. On the other side, the Bistrot Gour­mand has a del­i­cate and au­then­tic menu wait­ing for you to in­clude you in the dis­cov­ery of the Aquitaine ter­roir. His goal: Ob­tain­ing a Miche­lin star and brings a smile to cus­tomers ?!
