Pet­rossian, the fa­mous caviar mer­chant, was founded in Paris in 1920, and in ad­di­tion to its exquisite caviar, it also sells some of the world’s best smoked salmon, seafood del­i­ca­cies and foie gras. And the best place to sam­ple their exquisite wares is at their Left Bank restau­rant, which re­cently moved to new quar­ters just across the street from the bou­tique on the Av­enue de la Tour Maubourg. Just inside the front door of this el­e­gant din­ing room with a Ja­pane­ses­tyle mu­ral of waves on the wall, there’s a caviar bar where you do a tast­ing of three dif­fer­ent caviars. This same tast­ing is also served in the din­ing room, and per­haps with a shot or two of chilled caviar­in­fused vodka, a won­der­ful way to be­gin a caviar-themed meal by the restau­rant’s tal­ented new chef Re­naud Ra­mamourty. Start with one of Ra­mamourty’s sig­na­tures dishes, “Comme un Oeuf à la Coque”, three free-range eggs with hard-boiled whites topped by softly shirred eggs and Pet­rossian’s sub­lime Dau­renki caviar, or maybe the del­i­cate open tart of creamed leeks with caviar Alverta ma­ture, and then the tagli­atelle with os­se­tra caviar or maybe the cod filet coated with caviar and gar­nished with green ravi­oli.
