Chic Caviar Dining
Petrossian, the famous caviar merchant, was founded in Paris in 1920, and in addition to its exquisite caviar, it also sells some of the world’s best smoked salmon, seafood delicacies and foie gras. And the best place to sample their exquisite wares is at their Left Bank restaurant, which recently moved to new quarters just across the street from the boutique on the Avenue de la Tour Maubourg. Just inside the front door of this elegant dining room with a Japanesestyle mural of waves on the wall, there’s a caviar bar where you do a tasting of three different caviars. This same tasting is also served in the dining room, and perhaps with a shot or two of chilled caviarinfused vodka, a wonderful way to begin a caviar-themed meal by the restaurant’s talented new chef Renaud Ramamourty. Start with one of Ramamourty’s signatures dishes, “Comme un Oeuf à la Coque”, three free-range eggs with hard-boiled whites topped by softly shirred eggs and Petrossian’s sublime Daurenki caviar, or maybe the delicate open tart of creamed leeks with caviar Alverta mature, and then the tagliatelle with ossetra caviar or maybe the cod filet coated with caviar and garnished with green ravioli.
