Paragon 700 Boutique Hotel & Spa is an exclusive boutique and design hotel in the heart of Ostuni in Puglia. The elegant red palace, whose history dates back to the 18th century, has been carefully restored and features eleven individually designed rooms and suites with unique design elements from around the world.

The Palazzo Rosso - the red palace that now houses the Hotel Paragon 700 - has a long and fascinating history. It was once the home of Ostuni’s first mayor, Don Paolo Tanzarella. Thus, the venerable stone building has always been at the centre of the town’s social and cultural life: this is where the coachmen, called trainieri (cart drivers in Pugliese dialect), waited for their daily assignments, and from here holidaymakers can now immerse themselves in Ostuni’s life and explore the beautiful region.
At Restaurant 700, emphasis is placed on seasonal dishes, variety of flavours and local products. Here guests can expect the best traditional gourmet dishes of Puglia, prepared to a high standard and with the chef’s own personal touch.
On closer inspection, the stones of the façade resemble the shape of a diamond. As Paragon is one of the largest diamonds in the world and the hotel is located between the 700th and 800th districts of Ostuni, the name “Paragon 700” was born.
