One of the fa­mous spe­cial­ties of the is­land, which does not con­tain meat as, in the past, live­stock was scarce be­cause of the vol­canic soil. The lack of meat, how­ever, pushed res­i­dents’ imag­i­na­tion to the cre­ation of de­li­cious dishes.

To pre­pare the recipe,

• grate ½ kilo onions,

• finely chop ½ kilo San­torini cherry toma­toes

• add mint, salt, pep­per,

• add 1 tea­spoon of bak­ing pow­der and a lit­tle flour and mix un­til you cre­ate a bat­ter.

Leave the mix­ture in the fridge for 4-5 hours and then take a ta­ble­spoon of the mix­ture and pour it in hot oil un­til fried.

Fi­nally, serve the tomato balls on a plate.
