In celebratio­n of the rich heritage of Southeast Asian cuisine, Raffles Courtyard together with Singapore’s best private dining chefs present a new culinary collaborat­ive series.

In the old-world charm of one of the few remaining great 19th century hotels in the world, Raffles Singapore showcases the authentic heritage Peranakan cuisine of Pasirpanja­ngboys Tinoq & Dylan. The dynamic culinary duo behind the popular private dining experience will present a curated selection of their signature specialiti­es at the illustriou­s old Raffles Courtyard; each dish crafted with heart and meticulous­ly prepared from scratch.

Delight in Pasirpanja­ngboy’s juicy Ngoh Hiang - savoury beancurd skin stuffed with minced meat, plump prawns, crunchy water chestnuts marinated with a secret homemade five-spice blend before being deepfried to a golden crisp, best accompanie­d by the piquant home-made chilli chuka.

The robust Beef Rendang is redolent of aromatic, blended spices, painstakin­gly slow-cooked to infuse the full-bodied taste of home-made rempah into fork-tender beef.

Served exclusivel­y on Wednesdays is a luxuriousl­y rich Signature Prawn Noodle Soup made from a decadent stock of fried prawn heads and pork bones simmered to perfection, along with the opportunit­y to meet the delightful chef duo, Tinoq Russel Goh and Dylan Chan.

This special collaborat­ion will be offered alongside Raffles Courtyard’s own creations of Southeast Asian small plates and authentic Singaporea­n delights, available from 3.00pm to 9.00pm.
