A year ago, Hong Kong lost a beloved in­sti­tu­tion: the renowned Hokkaido sea urchin at Am­ber. The dish was re­moved to make way for new sig­na­tures – much to the cha­grin of Hong Kong's din­ing elite. Well, it's time to dust off those moth­erof-pearl spoons, be­cause the clas­sic is back on the menu, along with five other no­table dishes from the restau­rant's ar­chives, in­clud­ing the foie gras Chupa Chups and the Bresse poulard with black win­ter truf­fles. They're all be­ing served as part of the six-course Am­ber Clas­sics menu, avail­able un­til the restau­rant's ren­o­va­tion is com­plete next year.
