Our smoked car­rots with al­mond cream and spiced honey is my top pick. Car­rot and al­mond is a clas­sic com­bi­na­tion. We wanted to add com­plex­ity to the dish by hick­o­rysmok­ing the car­rots be­fore roast­ing them with a home­made spiced honey. Spices in­clude black pep­per, chilli, car­away, rose­mary, cumin and thyme. With spring here, watch out for new cre­ations fea­tur­ing fresh fava beans, peas and wild gar­lic.
