To gain a deeper understanding of the cuisine’s nuances (remember – it’s not Spanish food!), we recommend going for the Discovery Menu, where an assortment of snacks signal your journey’s start, where typical Basque ingredients like anchovies, Idiazabal cheese, and cured meats are used. The traditional Txangurro boasts freshness, with the use of sweet Sri Lankan mud crab paired with the clean, crisp flavour of tomato essence. For something bolder, the menu also includes the Oxtail Bomba Rice comprised of sous-vide oxtail, tender bomba rice, chive aioli, and a quail egg yolk that adds silky texture.
