TEMPERATUR­E

Unopened tins last up to six months if refrigerat­ed between -2 and 3 degrees Celsius. Take the caviar out of the fridge about 10 minutes before serving.

SERVING WARE

Definitely mother-of-pearl spoons, to avoid silverware’s metallic aftertaste. They’re also gentler on the caviar so you don’t accidental­ly pop any precious beads.

Additional­ly, consider tasting the caviar off the back off your hand to let your body heat ‘open up’ the flavours. Be sure to spread a heaping spoonful so that there’s enough for your palate to taste.

RELISH IT RIGHT

Instead of chewing, use your tongue to push the caviar to the roof of your mouth and let the roe melt naturally. This way, you get to enjoy the way the nuances slowly unfurl. Savour caviar on its own first, before chasing it with a sip of brut champagne, vodka, or a dry white wine.
