Lo­cated in the West­ern Pyre­nees be­tween Spain and France, the Basque re­gion is an au­ton­o­mous com­mu­nity that has de­vel­oped its own cul­tural land­scape, lan­guage, and culi­nary tra­di­tions. In Sin­ga­pore, Basque Kitchen by Ai­tor is per­haps the best place to visit to ex­pe­ri­ence unique Basque flavours, created by Head Chef Ai­tor Jeron­imo Orive.

To gain a deeper un­der­stand­ing of the cui­sine’s nu­ances (re­mem­ber – it’s not Span­ish food!), we rec­om­mend go­ing for the Dis­cov­ery Menu, where an as­sort­ment of snacks sig­nal your jour­ney’s start, where typ­i­cal Basque in­gre­di­ents like an­chovies, Idi­az­a­bal cheese, and cured meats are used. The tra­di­tional Txan­gurro boasts fresh­ness, with the use of sweet Sri Lankan mud crab paired with the clean, crisp flavour of tomato essence. For some­thing bolder, the menu also in­cludes the Ox­tail Bomba Rice com­prised of sous-vide ox­tail, ten­der bomba rice, chive aioli, and a quail egg yolk that adds silky tex­ture.
