THE BLACK SWAN WOWS ONCE MORE
It’s been six years since The Black Swan opened its doors and has earned itself a reputation as an ever-dependable establishment for both business lunches and weekend revelry. Clearly, complacency is not in the restaurant’s vocabulary, which is why it has tasked Head Chef Alysia Chan (formerly of Crackerjack) to reinvigorate its menu. She works her magic from the get-go, starting with surprisingly scrumptious vegetable dishes like the Charred Sugarloaf Cabbage and Broccoli & Pine Nut Hummus. Meanwhile, umami flavours and texture are all found in the Crab & Venus Clam Trofie Pasta, while the honest to goodness flavour of beef comes through so deliciously in the Vintage Beef Porterhouse MBS 3+. It uses beef that is twice the age of regular cattle and is dryaged further for 30 days, resulting in a robust flavour that exclaims, “This is what a steak should taste like.”
