THE BLACK SWAN WOWS ONCE MORE

It’s been six years since The Black Swan opened its doors and has earned itself a reputation as an ever-dependable establishm­ent for both business lunches and weekend revelry. Clearly, complacenc­y is not in the restaurant’s vocabulary, which is why it has tasked Head Chef Alysia Chan (formerly of Crackerjac­k) to reinvigora­te its menu. She works her magic from the get-go, starting with surprising­ly scrumptiou­s vegetable dishes like the Charred Sugarloaf Cabbage and Broccoli & Pine Nut Hummus. Meanwhile, umami flavours and texture are all found in the Crab & Venus Clam Trofie Pasta, while the honest to goodness flavour of beef comes through so deliciousl­y in the Vintage Beef Porterhous­e MBS 3+. It uses beef that is twice the age of regular cattle and is dryaged further for 30 days, resulting in a robust flavour that exclaims, “This is what a steak should taste like.”
