The Les Amis Group’s ex­pan­sion is guided by a strong pas­sion for food cul­tures and their latest ven­ture, Indigo Blue Kitchen, hits close to home. The restau­rant serves Per­anakan cui­sine in a modern set­ting, fea­tur­ing dishes close to the heart of Des­mond Lim, Les Amis Group’s chair­man. “This Per­anakan restau­rant is a her­itage project for me as the recipes are my grand­mother’s and I would like to share them be­fore they are lost for­ever,” he shares. There­fore, the food here is hon­est and fa­mil­iar, like IB’S Nonya Poh Piah, which comes with spe­cial in­gre­di­ents like Chi­nese sausage and dried sole fish sprin­kle. The Bak­wan Kepit­ing Soup is com­fort­ing to the core, with its rich broth and han­drolled balls of crab, prawn, pork, and bam­boo shoots. Mean­while, the Apom with Three Pen­gats (durian, jack­fruit, and banana) sweetly – and uniquely – rounds up the sat­is­fy­ing meal.
