Taiyo No Tamago mangoes, thick with flesh and juices bursting, served with Hokkaido milk ice-cream, or amadai with its scales on, made crispy and served with an umami-bomb sauce of sundried tomatoes, shio kombu and butter. Some dishes have already become classics, such as the uni generously piled on their cloud-like toasted brioche. For vegetarian eaters, the restaurant now offers an equally seasonally-aware plant-based menu. The wine pairings are well thought out, with some unexpected bottles, but if you’re only after a glass or two, the razor-sharp sommelier can help you out.
