www.galaxymacau.com The region of Chiu Chow has its own unique culinary identity, with similarities to that of Guangdong province but overall in a league of its own. Entering the restaurant reveals a contemporary design, which blends gold and burgundy, from the carpeted main dining area to golden panels and brass light fixture setting the luxury tone of the establishment. The restaurant serves traditional Chiu Chow cuisine at its best, and the meal often starts with tiny cups of strong black tea—just one of the ways Pak Loh preserves Chiu Chow traditions. Don’t miss the strong soy-based marinated dishes, which include sliced goose, tofu, and various meat cuts and offal cooked in the rich marinade, served best with a sweet white vinegar with garlic dipping sauce. Casseroles and bigger seafood dishes are impressive, such as sauteed kale with dried fish and mushrooms—a proper Chiu
Chow classic—or crispy baby oysters flavoured with spicy salt, a welcoming alternative to the traditional oyster pancakes. Chiu Chow desserts tend to be on the sweet and starchy side, but we’d still save room for Pak Loh’s signatures prepared with taro and sweet potatoes.
