The dinner menu is rich with beautifull­y presented dishes with their intricate, balanced blend of spices—West Bengal mustard oil adding potency to homemade cottage, organic spinach, corn and green peas in the paneer palak melony; cumin and coriander seed lending their citrus-like zing to young okra; or pungent asafoetida (the devil’s spice) giving that extra edge to hing dal tadka, a-swirl with clarified butter. The lunchtime buffet is a great way to sample more of their more homestyle offerings, such as bright Goan prawn curry with kokum and coconut milk, or unctuous gosht sagwala—lamb cooked down in spinach puree with tomato, onion and fenugreek leaves.
