Sushi Mizumi is not a standalone restaurant, per se, but rather the front section of the main Mizumi restaurant in Wynn Palace. Up to 14 diners can perch on red high seats set around three sides of the rectangula­r sushi bar, which is modern in style to match the crimson colour scheme of the hotel and restaurant. The actual bar, however, is fashioned from traditiona­l Japanese hinoki cypress wood; craftsmans­hip is the main focus here, and so the tableware and crockery are handspun while the glasses are made from hand-cut Japanese crystal. The matsu, ume and take omakase sushi menus are of varying lengths, bookended by seasonal appetisers and handpicked seasonal fruit. Staff are helpful when it comes to ordering, showcasing considerab­le knowledge of the ingredient­s and also of the premium sake list. It’s worth noting that the three omakase menus are not always available at lunchtime—instead, standard set meals on trays are offered— so call ahead if you wish to visit in the day.
