Chef Vicky Lau’s blend of European and Asian culinary influences has evolved in sophistication and complexity over the years, resulting in her current eight-course tasting menu of poetic “Odes” to ingredients, from decadent Mayura beef to humble Chinese yam. The latter dish is a prime example of how Lau layers flavours and textures, with earthy yam, smoked eel, silky cauliflower cream and rich Ossetra caviar all working together harmoniously. Tate’s interior is straight out of Wes Anderson film, a designer’s dream of blush pink, marble and gold, with a myriad of gorgeous details everywhere you look—the perfect setting for each exquisitely-plated dish that arrives at your table. The wine list too is carefully-curated with helpful tasting notes, a collaboration with Master of Wine Jeannie Cho Lee that includes many organic and biodynamic choices. Service meanwhile is exemplary, being personable, knowledgeable and always willing to go the extra mile—any place that offers extra petit-fours is a winner in our book.
