Ho­tel Icon, Above & Be­yond of­fers beau­ti­ful har­bour views in a nat­u­rally lit restau­rant with floorto-ceil­ing win­dows. While the din­ing room is long and nar­row, in the day­time the am­bi­ence is bustling with the vibe and chat­ter of old school yum cha in a mod­ern el­e­gant set­ting. The dim sum menu of­fers the usual sus­pects, as well as in­ter­est­ing ren­di­tions of clas­sics—such as baked bar­be­cued pork puffs with cen­tury eggs and steamed garouper fil­let dumplings with ginger and spring onions. Can­tonese clas­sics are on the menu with some dishes given a mod­ern in­ter­pre­ta­tion. From the for­mer, crispy chicken (avail­able half or whole) is fowl beau­ti­fully done, with thin skin and ten­der meat, served with tra­di­tional lemon juice and salt gar­nish on the side. A more con­tem­po­rary of­fer­ing such as wok-fried M7 wagyu beef cubes with green ap­ple, mus­tard and wasabi are equally be­guil­ing. The wine list runs the ga­mut from en­try-level af­ford­able wines and mass mar­ket Mumm to the likes of Sa­lon and Krug, with a won­der­ful se­lec­tion of wines by the glass. It’s no­table that the list also in­cludes eso­teric la­bels from China, Ja­pan and Is­rael.
