Housed within the her­itage com­plex of Tai Kwun, Jia Group’s Huaiyang restau­rant pays at­ten­tion to the de­tails. The bar area takes on a more Western de­sign, where rat­tan and wood recre­ates a warm and friendly vibe that en­cour­ages in­ter­ac­tion be­tween res­i­dent mixol­o­gists and guests. The main din­ing area, how­ever, takes a more vin­tage feel, as the abun­dance of wood com­ple­ments the Chi­nois­erie-in­spired fur­nish­ings. There’s great em­pha­sis on the fine crafts­man­ship of Chi­nese chefs in tra­di­tional kitchens, as the restau­rant show­cases metic­u­lous de­tails in the prepa­ra­tion of its sig­na­tures. From a bril­liant Sichuan numb­ing-and-spicy twist on xiao long bao, to hand­minced or­ganic pork made into tra­di­tional lion’s head meat­balls, Old Bai­ley tran­scends the clas­sics and rein­ter­prets them with sub­dued fi­nesse. Teas come highly rec­om­mended, as is the se­lec­tion of cock­tails de­signed and crafted by the group’s res­i­dent bev­er­age di­rec­tor James Barker, whose house­made tea cor­dials el­e­vates shaken con­coc­tions with a wel­com­ing Chi­nese twist. Ser­vice is proper and at­ten­tive, and mem­bers of the staff are keen to help with food and bev­er­age pair­ing sug­ges­tions and por­tion con­trol.
