SENSORY EVALUATION

All brands were evaluated by experts at the food and nutrition laboratory of a reputed college of Delhi University. Chilled and finely stirred samples were provided to panellists. The brands were rated by them on the following parameters: • Colour and appearance • Aroma and flavour • Sweetness • Taste • Aftertaste • Overall acceptabil­ity Scoring was done on the five-point scale where 5 stood for excellent, 4 for good, 3 for average, 2 for poor, and 1 for very poor.
