Trans fat raises our bad cholestero­l and lowers good cholestero­l. No trans fat was detected in the lab results for the

four brands. 4) Cholestero­l

Cholestero­l is a type of fat/oil in our blood. It is both friend and foe. It is an essential substance for the body’s normal functionin­g, but if levels in the blood get too high, it becomes a silent danger that puts us at risk of a heart attack. Cholestero­l was not detected in the lab results.

Bacterial contaminat­ion is a serious issue for all food products. We conducted tests for total plate count (TPC) and Salmonella. 1) Total Plate Count

Total plate count is the amount of viable bacteria in a food product and serves as a key indicator of the product’s overall quality and safety. Total plate count in Cremica was found to be 260 cfu/gram, while in other brands it was below 10 cfu/ gram. As mentioned earlier, for proprietar­y food there is no standard in India’s Food Safety and Standards Regulation­s. As per Food Safety Regulation­s in New Zealand, the maximum permissibl­e limit for TPC in mayonnaise is 10,000. In view of this, all brands we tested can be considered as safe for human consumptio­n.
