Mustard Sauce These six brands tell it all
Mustard sauce ( in Hindi) is a popular condiment much liked for its peppery notes. Made from the seeds of the mustard plant, this multipurpose condiment is commonly used as a sandwich spread or as an ingredient in salad dressing, and even paired with meats, fish and cheeses. If you are a mustard sauce fan, you will not be starved for choice either—with the number of brands in the market. Yet, are all of them safe for consumption, considering that they use acidifying agents for enhancing taste as well as prolonging the shelf life? Are they free from yeast and mould? This report checks six leading brands of mustard sauce along these and other parameters that are important determinants of quality and safety.
The parameters included protein content, total soluble solids, acidity, preservatives and yeast and mould count. One brand, American Garden, was imported from the USA. The other brands were manufactured in India. All six brands did relatively well in the tests – some scored better, though, especially with regard to protein, as discussed in detail below.
The tests were conducted in an NABL-accredited laboratory.
