Protein and Nitrogen
Health benefits of protein include production and smooth functioning of enzymes and hormones. It is vital for cellular and muscular health. Consumption of adequate protein facilitates molecular transportation and cell repair and regeneration, and ensures strong immune defence, healthy hair, and maintenance of fluid balance in the body.
Amino acids are the building blocks of proteins, and nitrogen is a component of amino acids. As per FSS Regulations, nitrogen in pasta shall not be less than 1.7 per cent on dry basis. Overall, a higher amount of protein and nitrogen is better for consumers.
Acid-insoluble ash indicates the presence of sand, dirt and dust in food products. As per FSS Regulations, ash insoluble in dilute hydrochloric acid (on dry basis) should not be more than 0.1 per cent in pasta. So, lower is better for consumers. Acid-insoluble ash was found below the prescribed legal limit in all brands. It was found lowest in Weikfield and Borges (0.002 per cent) and highest in Del Monte (0.047 per cent).
