This is the inorganic residue that remains in a food product after heating. Ash is calculated by heating the sample at 550 to 600 degrees C, which destroys all organic matter. Ash in malt-based food shall not be more than five per cent by weight. There is no requiremen­t for proprietar­y food.

• All the malt-based products were within the permissibl­e limit for total ash.
