To begin with, the concept of ‘dining around the kitchen’, with separate stations for noodles, dumplings, teas, and desserts, along with an interactive stage for bartenders and chefs, won us over. While the TCK salad with creamy avocado and cress sauce is a great way to start the meal, the wok-fried mushroom salad and crystal shrimp dumplings are more indulgent appetisers. The star of the evening, Beijing Roasted Duck, deserves a special mention for its timehonoured preparation. Marinated in honey and sauces for 48 hours before being tossed into the wood-fired oven, the dish is served by Head Chef Zhang Hong Sheng himself at your table, where he carefully slices and rolls the meat in thin crêpes with sweet bean sauce, and mashed garlic and cucumber. Wind up with a divine scoop of chocolate rocky road ice cream, or wash all the flavours down with a cup of Chinese tea.
