Gar­den Green Flat In­dian Beans Salad

Rich­in­vi­ta­min Kand­foli­cacid, flat­green­beansalso havean­tiox­i­dant prop­er­ties that boost­the im­munesys­tem. SERVES 4 INGREDIENTS Fresh beans (pa­padi), stringed and cut into one inch pieces, 200 gms; cherry toma­toes, 50 gms; fresh bean sprouts, 50 gms; olive oil, 2 tsp; lemon juice, 1 tsp; salt and black pep­per to taste; beet­root purée, lemon pieces and a slice of roasted multi­grain bread for sea­son­ing METHOD Blanch the flat beans in boil­ing water and let it cook briefly for three-four min­utes. Drain, and rinse with cold water. Blend olive oil and fresh lemon juice. Add salt and pep­per. Add flat beans, cherry toma­toes and bean sprouts, and toss well. Sea­son with lemon slices, beet­root purée and roasted multi­grain bread.
