TIPS TO MAKE FRUITS AND VEGGIES LAST LONGER

Lockdown led to people stocking on kitchen staples, including fruits and vegetables, though keeping them fresh for a longer period poses a great challenge. But there are tips and tricks that experts use to make such products last longer.

Chef Nishant Choubey suggests pickling for longevity. “Make a solution of vinegar, salt and sugar, and boil with whole spices. Bring it to room temperatur­e and put the vegetable or fruits in it. Keep in an airtight jar,” he says. For storing meats, he suggests freezing as “a way to improve shelf life”, and for vegetables he endorses stewing. “Cook or boil the raw vegetable with stock and spices to convert into stew. Quickly bring down the temperatur­e under ice bath and store at 3-5 degree Celsius,” Choubey says.

Approving traditiona­l methods, he also recommends sun drying. “Vegetables, meats and lentils can be dried under the sun for a long period of time to ensure there is no moisture left,” he adds.
