As Covid-19 casts its spell over us, we have adopted an easy-going new attitude towards food, emphasising on healthy options, be it smoothies or salads. And, the latest favourite is ramen bowls. They are easy to make and healthy, too.

“Ramen bowls are trending because of the obvious comfort and intense flavours. They can be prepared to balance protein, carbohydrates and fibre. Be it vegetarian or non-vegetarian, one can create a satisfying bowl with minimal effort,” says chef Nishant Choubey.

“Innovative bowls of ramen in salty broth, with a combination of various toppings and distinct flavours, often coupled with sides of grilled meats or seafood, continue to gain popularity. With vegetarian options too available, there are many takers of this healthy bowl,” says chef Rakesh Sethi.

Recently, many shared their variations of this dish on social media. “If you are having ramen, fresh vegetables, chicken etc. can be added. You can always go for ramen noodles made with whole grains, millets, etc. There are some gluten-free varieties of ramen. Also, go for low-sodium noodles. If you can avoid taste enhancers, replace them with your healthy spice mix at home,” advices nutritionist Preety Tyagi.

If you are vegan, you can try miso ramen bowl, comprising plant-based broth with scallions, shiitake, bok choy, snow peas and tofu, infused with mirin.
